7-Stage Quality Control Process

We apply strict controls at every stage — from cherry reception at the cooperative to container stuffing at port.

Cherry Reception & Sorting

Only fully ripe red/yellow cherries accepted. Floatation sorting removes underripe, overripe and defective cherries before processing begins. Sorted at cooperative level before delivery to our mill.

Processing Monitoring

Fermentation time, water temperature, and pH monitored during wet processing. Natural and honey lots turned every 4–6 hours during drying. Moisture checkpoints at 30%, 20%, and target 11–12%.

Milling & Screen Separation

Parchment or dried cherry hulled, polished, and screen-separated at our dry mill. Screens 14, 15, 16 and above separated for specialty lots. Under-screen and broken beans directed to commercial grade.

Moisture & Water Activity Test

Every bag lot tested with calibrated Kett PM-300 or Draminski moisture meter. Target: 10–12% MC. Water activity (Aw) tested with Rotronic or Novasina meter — must be ≤0.60 Aw to prevent mold during transit.

SCA Defect Analysis

300g green sample analyzed per SCA Green Coffee Classification protocol. Primary (Category 1) and secondary (Category 2) defects counted and recorded. Specialty grade: 0 primary, max 5 full defects per 300g.

Q-Grader Cupping

Each export lot cupped by our SCA-certified Q-Grader using the SCA cupping protocol (8.25g per 150ml, 93°C water, 4-minute steep). Scores recorded for all 10 attributes. Lot must pass 80+ to ship as specialty grade.

Pre-Shipment Inspection

On request, SGS, Sucofindo, or Intertek inspector verifies weight, bag count, condition, and container stuffing. Inspection certificate issued. Container sealed with numbered lead seal in inspector's presence.

Quality Control Questions

We use the SCA (Specialty Coffee Association) Green Coffee Classification protocol. 300g samples are analyzed for Category 1 (Primary) and Category 2 (Secondary) defects. Specialty Grade requires 0 primary defects and a maximum of 5 full defects per 300g sample. This is the global standard used by specialty coffee buyers worldwide.
We target 10–12% moisture content for all exports. ICO guidelines recommend 9–12% MC. Lots above 12.5% are re-dried before export. Moisture is tested with calibrated meters at milling, after bagging, and again before container stuffing. GrainPro packaging prevents moisture exchange during transit.
Yes. Pre-shipment inspection by SGS, Sucofindo, or Intertek is available on request. The inspector attends container stuffing, verifies bag count and weight, checks container condition, and seals the container with a numbered lead seal in their presence. Certificate issued within 2–3 business days. Inspection costs (USD 150–300 per container) are passed to the buyer at cost.
Yes. We provide cupping reports for current lot availability when you request a sample. We recommend ordering 200–500g green bean samples first, cupping them in your own roastery, then placing a full order. Our cupping report uses the standard SCA format covering all 10 attributes and gives you an accurate baseline for comparison against your own cupping.
